Hey there i have always taught the overlapping z'S technique on all vertical up, also stacking houses. on thick plate. The problem being that yes you can weld vertical down on thin plate but but some people think this is fine for fillet welds on steel frame structures above 10mm thick universal beams and so on, but you will find that these welds will suffer with cold lap, the surface on the weld looks good but its only sitting on the surface of the plate no penetration or very little.
