Can I cool 316 stainless steel with water after welding without changing the molecular structure?

quenching 316 stainless will not change the microstructure. sometimes it might cause other problems like cracking in highly stressed joints.

I worked one place where it was recommended to fast cool stainless and we used an air and water mist.
